LOLLY paprica & rosemary PIE


Last Sunday my girlfriend Barbara http://mammamsterdam.blogspot.com/ invited me in the Astarotheatro for a tasting wine: SANGIOVESE.
It was our first pubblic exibition together... the first of a long list...
I had to take the attention of her guest with my "bites"...
and I decided to prepare someting special:

LOLLY paprica & rosemary PIE







INGREDIENTS:
280 GR WHITE FLOUR
240 ML FRESH MILK
2 EGGS
70 GR FRESH BUTTER
50 GR PARMIGIANO CHEESE
1/2 COFFE SPOON OF SALT
A PINCH OF PEPPER
1 PAPRICA in small cubes cooked in one coffee spoon of olive oil and a spring of rosemary.

Is the most simple recipe that you can make...
Preheat the oven 200° and prepare your mini miffin baking tin.
In a bowl mix all the ingrediedients excuded the paprica, and mix with a whisk untill you get an homogeneus texure. Than add the paprica and mix gentle with a wood spoon.
Fill each muffin form for 3/4 and put in the oven for 15 minutes.
When they are out of the oven cover them with a "clean" cotton towel to keep more humidity inside.

Than you give a more tuch adding a topping :
with grilled zucchini with extravirgin olive oil, fresh mint, home made pesto of fucola and basil
or grilled eggplant with olive oil, rucola and aceto balsamico.
